Abstract
Several research studies have highlighted that food systems in Latin America have undergone major transformations in recent decades -through, among other factors, international free trade agreements and neoliberal policies, the promotion of large monocultures and new biotechnologies, as well as the expansion of the highly processed food industry-, displacing subsistence agriculture, undermining food sovereignty, affecting the environment and sustainability, and generating a nutritional transition with serious effects on the population. ¹ Furthermore, in the context of the growing political power of the food industry and its influence on food discourses and practices,...
